We’re definitely getting into the holiday spirit on Day 4 of my christmas countdown with a recipe for Sparkling Rose with Cherry Granita. I can never say “no” to a glass of champagne or sparkling wine, and this one with the addition of a cherry granita is bellissimo! Christmas prep is stressful don’t ya know - I need a couple of these to make it to Christmas Day in one piece.

SPARKLING ROSÉ WITH CHERRY GRANITA
Adapted from recipe by Delicious Magazine
INGREDIENTS
½ c caster sugar
250 g fresh or frozen cherries
1 – 2 tbsp cherry brandy – optional
Sparkling Rosé
To Serve
fresh cherries
fresh mint leaves
METHOD
Place sugar, cherries, cherry brandy and ½ cup water in a saucepan over medium heat. Cook, stirring constantly, for 4 - 5 mins or until sugar dissolves. Bring to the boil, then set aside to cool slightly. Transfer to a blender and whiz until smooth. Strain through a fine sieve into a bowl. Add 3 cups of water and whisk to combine. Transfer to a shallow 5 cup capacity tray and freeze overnight or until solid.
The next day, using a fork, scrape the frozen cherry mixture to form chunky ice crystals. When ready to serve spoon into glasses, top with Sparkling Rosé and garnish with fresh cherries and mint leaves.
